This is so good! It was delicious and heartwarming. As a retired Air Force member I served three tours in Korea and still have fond memories. The restaurant’s kimchi jjigae is served for lunch only and made with a kelp and anchovy broth, vegetables and tofu. Made this twice in one week already. Kimchi jjigae is simple to prepare, provided you have some old or leftover kimchi to hand. It’s a warm, hearty, spicy, savory, delicious dish that pretty much everyone loves. The only problem is how to get good Kimchi. Only one cup of water in a soup to serve three people? 45 mins sounds excessive, but maybe it is was because the meat was bigger chunks and/or for the larger volume of soup?
